Habanero Pizza Stuffed Chicken Breasts
We've combined all the flavors of pizza, minus the crust, and incorporated it into a chicken breast stuffing. Quite delicious! The habanero peppers offer the perfect spicy kick and of course flavor. Try a light breading on this recipe well for a fun variation.
Ingredients
- 2 chicken breasts
- 4 ounces shredded mozzarella
- 2 ounces pepperoni slices, chopped
- 1 jalapeno pepper, chopped
- 1 habanero pepper, chopped
- 3 cloves garlic, roasted
- 2 tablespoons fresh basil, chopped + 1 tablespoon dried basil
- Salt to taste
- Pizza sauce for serving
Cooking Directions
- Preheat oven to 350 degrees.
- In a mixing bowl, combine mozzarella, pepperoni, jalapeno, habanero, garlic, 2 tablespoons fresh basil and a pinch of salt. Mix well.
- Heat a sauté pan to medium heat.
- Season each chicken breast with salt and dried basil.
- Sear each chicken breast about 2 minutes per side. Remove from heat and cool enough to handle with your hands.
- Slit a pocket into each chicken breast and stuff each with ½ of your pepperoni-mozzarella mixture. Close with toothpicks if needed.
- Set stuffed chicken breasts onto a lightly oiled baking sheet and bake 30 minutes, or until chicken is cooked through.
- Remove from heat and serve topped with pizza sauce.
