Mouth-Fire Mashed Potatoes

Mashed potatoes are the ideal side dish - plenty filling, delicious, and they go with pretty much anything. We make mashed potatoes a number of different ways, but this variation skips the traditional dairy and opts for olive oil and other seasonings. and plenty of fiery habaneros, of course, for your pleasure.
Ingredients
- 1 pound russet potatoes, peeled and chopped into chunks
- 2 habanero peppers, diced
- 1/4 cup fresh basil, roughly chopped
- 1 teaspoon chili powder
- 4 teaspoons extra virgin olive oil
- salt to taste
Cooking Directions
- Boil the potatoes about 12-15 minutes, or until they are nice and soft. Drain.
- Add remaining ingredients and mix well.
- Serve!
NOTE: You can easily hand mix this recipe, but a processor or electric mixer will make it more creamy. Also, feel free to add in more oil for a lighter consistency.
