Habanero, Apple Pear and Blue Cheese Stuffed Chicken Breasts
We love stuffed chicken recipes because while chicken can be rather boring by itself, it truly livens up in the presence of habanero peppers and fruit. In this recipe, we've paired the wonderful habanero pepper with apple pears and blue cheese, two ingredients with very strong flavors. Apple pears look like an apple with pear skin. The flavor is a combination of apple and pear with more of a pear consistency. The combination of apple pears and habanero peppers hold their own against the powerful flavor of blue cheese.
Habanero, Apple Pear and Blue Cheese Stuffed Chicken Breasts
Ingredients
- 2 chicken breasts
- 1 apple pear, pealed, cored and diced
- 8 medium sized basil leaves, chopped
- 1 habanero pepper, diced
- 2 ounces crumbled blue cheese
- Salt and pepper to taste
Cooking Directions
- Preheat oven to 350 degrees.
- In a mixing bowl, combine apple pear, blue cheese, habanero, fresh basil and a pinch of salt. Mix well.
- Heat a sauté pan to medium heat.
- Season each chicken breast with salt and pepper.
- Sear each chicken breast about 2 minutes per side. Remove from heat and cool enough to handle with your hands.
- Slit a pocket into each chicken breast and stuff each with ½ of your habanero, apple pear mixture. Close with toothpicks if needed.
- Set stuffed chicken breasts onto a lightly oiled baking sheet and bake 30 minutes, or until chicken is cooked through.
- Remove from heat and serve.
