Grilled Salmon in Habanero-Butter Sauce 
        
            
 
          
          Grilled salmon is a mainstay in the Madness household. Sometimes you just want a simple grill and a basic sauce to top it with. Simple as it is, this recipe excels in flavor.
          Grilled Salmon in Habanero-Butter Sauce 
           Ingredients
          
            - 2 6 ounce salmon fillets
- 1 tablespoon cayenne
- Salt and pepper to taste
- ¼ cup white wine
- Spray oil
- SAUCE: 1 tablespoon melted butter
- 1 tablespoon white wine vinegar
- 1 teaspoon lime juice
- 2 roasted habanero peppers, diced
Cooking Directions
          
            - Season  salmon fillets with cayenne, salt and pepper. 
- Heat  a large pan to medium-high heat. Lightly spray with oil.
- Saute  salmon fillets about 1 minute each side.
- Add  white wine and allow to reduce slightly. Reduce heat to medium-low and cover.
- Cook  about 5 minutes, or until salmon is cooked through.
- Meanwhile,  add melted butter, white wine vinegar, lime juice and habanero peppers to a  mixing bowl.
- Whisk  until smooth.
- Set  salmon onto serving plates and top with sauce.
- Serve!
